Tapenades are beautifully balanced in their savor and bitterness. It is made with naturally fermented black olives, anchovies, capers, and garlic. The anchovies and garlic enhance the meaty taste of the black olives. 

This olive has a slight bitterness of the black olives that is well balanced with the floral and herbaceous notes of the rosemary and the sharp pungency of the garlic.

This fermented green olive is mainly of the Mission or Manzanilla cultivar, prepared in the Spanish -style meaning it has undergone a lye treatment before brine-curring. 

Ginger, lemongrass, coriander, and coconut milk add flavor to this delicious green manzanilla olive base.
